Living on the farm is wholesome living with golden warm sunrises to peach juice running down your fingers as you prepare fillings to bake homemade pies for the local farmer’s market. Life on a farm like real estate operates according to a consistent routine: tending to the animals, preparing fruit for pies, and skillfully assembling lattice crusts, all while appreciating the unique aspects of my REALTOR® life. Bring Some Farm to your Kitchen - Homemade Peach Pie with Crumb Topping
Ingredients
For the pie filling:
- 1 unbaked 9-inch pie crust (homemade or store-bought)
- 5–6 cups peaches, peeled and sliced (jar peaches work
also)
(about 6–7 medium peaches) - ¾ cup granulated sugar
- 3 Tbsp all-purpose flour (or cornstarch if you like
it silkier)
- 1 tsp cinnamon
- ¼ tsp nutmeg (optional)
- 1 tsp vanilla extract
- 1 Tbsp lemon juice
For the crumb
topping:
- 1 cup all-purpose flour
- ½ cup brown sugar (packed)
- ½ cup unsalted butter (cold, cut into cubes)
- ½ tsp cinnamon
Directions
- Preheat oven to 375°F (190°C). Place oven rack in the
center.
- Prepared peaches: In a large bowl, toss peaches with
sugar, flour, cinnamon, nutmeg, vanilla, and lemon juice. Let it sit for
10 minutes to get juicy.
- Make crumb topping: In a medium bowl, combine flour,
brown sugar, and cinnamon. Cut in cold butter with a pastry cutter or a
fork until it resembles coarse crumbs.
- Assemble the pie: Place the unbaked crust in a pie
pan. Brush your egg wash all along the pie crust with a pastry brush. Pour
in peach filling and spread evenly. Sprinkle crumb topping over the
peaches.
- Bake for 45–55 minutes, until topping is golden brown
and filling is bubbling.
- Cool for at least 2 hours before slicing (the filling
will set as it cools).
- Refrigerate once cooled.
Serve warm or
at room temperature. It’s delicious with a scoop of vanilla ice cream or fresh
whipped cream.
